Glad I configured my iMac with a 2TB SSD - I just knew it'd be a good choice! I'll probably use it again when the next version of macOS comes out so I can try it before making it my everyday OS, and I'll keep what by then will hopefully be a solid version of Monterey (12.6?) to continue using if I prefer.

Now I'm satisfied with my clean install I've erased the "buggy" copy of Monterey and for now I'm leaving the partition spare. Just a matter of holding down the power button (same as Recovery mode) and selecting which startup disk. Incidentally dual booting my M1 system worked just fine. So if at a later date I do decide I'd rather use Big Sur, or I just brick my new M1 Mac through shear incompetence whilst poking around in Recovery mode I should be able to sort things out! In the meantime I have looked into Apple Configurator and realised that I can run it on my 2014 MB Air (for some reason I'd got it into my head I'd need another M1 Mac to plug into this one).

So unless it goes flaky again I'm a happy bunny. Only bug I've found is Do Not Disturb doesn't work (still chimes away for email), but I've cunningly solved that by using the volume buttons! ? I've been running on my "new" clean install of Monterey for a couple of days now, and touch wood it seems far more stable with no crashes.
